Zuke Bites

I’m not a fan of zucchini boats because I feel like they’re more watery and weird tasting. While a fan of zoodles, I wanted to try something different, so I made zucchini bites instead!
These are super easy to make, and kind of like mini pizzas if you put pepperoni on them (which I did when I reheated them for dinner last night).

Recipe:
Preheat oven to 350
Chop zucchini into circular coins, whatever thickness you’d like, and put them on a cookie sheet drizzled with olive oil
Take 1/4 tsp of pesto or pasta sauce and put it in the center of each bite, and spread it out
Bake for 20 minutes
Pull the cookie sheet out and sprinkle some parm and Italian seasoning on each bite. Put back in the oven for 5 mins.
Top with pepperoni if you’d like and serve!
